An impressive reserve wine made near Béziers in the AOC of Faugères, within the ocean of vines that is the Languedoc of Mediterranean France. Under the ownership of vigneron Jean Laugé, the domaine is certified organic and incorporates biodynamic practices. The vines themselves (which range from 40 to 100 years old) are trained as bushes on pure schist soil. The wine itself is made from a blend of 40% Carignan and 30% each Mourvèdre and Grenache, some of which is fermented semi-carbonic. The wine is then aged for 2 years in an combination of old oak, enamel, and fiberglass vats and is then held in bottle for several years.
This robust, meaty wine has notes of cedar, dried figs, mushroom powder, and coffee.
