Certified Biodynamic. Chenin from 3 plots. Manual harvest, slow pressing. No clarification. Vinification without inputs of any kind. Natural and total malolactic fermentation. Vinification and maturation in stainless steel vats for 12 months. Bottled without filtration. Volcanic sulphur (10 mg/l) can be added one month before bottling depending on the vintage.
