Jerome Bourgeois-Diaz is a 4th generation vigneron who is making some of the most compelling Champagne in Crouttes-sur-Marne, on the banks of the Marne River halfway between Paris and
Reims. Jerome is deeply committed to biodynamic farming, having gained certification by Demeter in 2015. The non-vintage extra-brut cuvee '3C' is named after the three cepages that make up the blend. The current disgorgement is based on the 2015 vintage. 43% Meunier, 34% Noir, and 23% Chardonnay. Fermented in a combination of tank and barrels. 2 years in bottle. Disgorged in March 2018. He achieved optimal ripeness this vintage and did not find the need to add dosage.
