A blend of Carinyena Blanca, Negra, and Gris + Garnatxa Gris and Blanca, and some Moscatell d'Alexandria. All grapes are organically grown with some biodynamic principles as well. Harvested by hand, 30% destemmed, with maceration on the skins for 5 days. 30% direct pressed and 40% piegeage by foot macerated for 12 more days and then spontaneous fermentation in stainless steel tanks. Aged for 4 more months on the fine lees before bottling - unfined, unfiltered, and zero SO2. Annual production is 3,120 bottles. The idea Salva has about this wine is to "pay tribute to all the native Empord� varieties recovered that we cultivate in the same plot of new planting, building a wine with everything together."
