This is a field blend of more than 25 traditional varieties (whites and reds mixed approximately 50% reds to whites). The vines are over 80 years old and hand harvested in September. Aging takes place in French oak, 2-3 years old, 225L (50%), stainless steel (50%) for a period of six months. Fermentation time is three weeks. Some parts of the vineyard are seeded with a legume blend to fertilize the soil in nitrogen.
