Likely the more ageable of the estate's two wines, the white known as Praruar, has a rich, golden tint with a strong minerality and pleasant bitterness, and an almost saline quality. It is from 100% Catarratto grapes. Like the red, the white undergoes spontaneous fermentation and sits on the lees and skins for
16 days. The wine is not filtered before bottling. About 2800 bottles are produced each year.
