A blend of 70% Espadin and 30% Tobala from Maestro Mezcalero Javier Mateo in Oaxaca's Central Valley. Agave roasted in traditional underground stone pit over black oak. Open wood tank fermentation is started with the addition of pulque from the agave Americana, then completed by ambient yeasts. Nose of tropical fruit: coconut, overripe pineapple. Grassy, fresh pear, then a touch of burnt match, old leather. The smoke is delicate and pleasing, not at all agressive. Palate: rich, oily, fruity but with a healthy mineral presence. Big bloom. White chocolate on the finish. Super value.
