Organically farmed Lambrusco di Sorbara Hand harvested in late September and fermented in steel tanks where it is kept until June then bottled unfiltered. The warm days prompt the start of a second fermentation in the bottle. The wine then rests one year in the bottle before release. It has no residual sugar and some sediment.
