Organic, Biodynamic. 80% Procanico, 20% Sangiovese. ‘Amai’ is a different cuvée each vintage, but will always be composed of a blend of red and white grapes native to northern Lazio, taken entirely from the field blend parcels planted by winemaker Giuliano Salesi himself. 'Amai' 2022 is 80% white and 20% red wine. The red and white wines were both vinified whole-cluster but separately in a mix of fiberglass and stainless steel tanks, then assemblage was done three months before bottling. The soil types on the Orto parcels are a mix of sand and clay, including soils of marine origin: calcareous and sandstone marl with quartz, at around 600m elevation. Unfined, unfiltered, between 10-40 g/l total SO2 added during racking, contingent on variations by tank, cuvée, and vintage.
