100% Chardonnay from the Cotes du Beaune, specifically from the villages of Pernand on into Echevronne. The Rollin family's vines, while not certified organic are are processed according to traditional principles such as hand harvesting and the use of naturally occuring yeast. The grapes are fermented in barrel and aged on their fine lees for 12 to 15 months.
This accessible yet robust white burgundy has notes of bayleef, cashews, quince and cultured butter.
