Milled, mashed, fermented, distilled and matured a former paint factory in Red Hook, BK, by distiller Daric Schlesselman and his team. The bourbon uses a four-grain recipe: 65% corn, 10% wheat, 5% rye, and 20% malt. A portion of the malted barley is roasted. The bourbon ages for about 1 year in 10 gallon charred new oak barrels. Cocoa beans, espresso, raisin, nutmeg aromas, then sage and tanned leather. In the mouth a nice creamy feel, brown butter, a little smoky with a touch of wildflower honey. Not your old granddad's Kentucky bourbon, but delicious.
