A collaboration of third-generation master distiller Carlos Camarena and Tequila Ambassador Tomas Estes, the Tequila Ocho project highlights the unique qualities of different agave fields in the Highlands of Jalisco around the towns of Arandas and Jesus Maria. No two bottlings are exactly the same. Wild yeast fermentation in small, open top pine vats contributes to the complexity and character of these marvelous tequilas.
The Los Nopales Plata is produced from 100% Highland agave harvested at the Rancho Los Nopales, named for the fence of prickly pear cactus that borders its eastern edge. Altitude 6800'. Clear, limpid aspect. Beautiful aromatics: orange blossom, chamomile, pineapple, green melon. Then a briny minerality and fresh cut grass. On the palate, a little darker and earthier than expected, but the chamomile note persists with notes of persimmon, lime zest, and delicate mint developing. Bolstered by a gentle but persistent heat, this is an excellent sipping tequila, at a great price.
