Vineyard: 100% of the fruit comes from estate-owned parcels located in each of the seven villages in the Côte des Blancs: Avize, Oger, Oiry, Cramant, Avenay Val d'Or, Bergères les Vertus, and Mardeuil. (70% Grand Cru, 30% Premier Cru)
Orientation: Multiple parcels, varied exposure
Soil: predominately limestone and clay
Viticulture: Practicing organic. Hand-harvested.
Vinification: Following 100% malolactic fermentation, the wine rested sur lie for 3 years, with occasional manual stirring. It has a 9 gram dosage.
Aging: One-quarter of the wine is aged in older (more neutral) 600L casks, the remainder is aged in stainless steel tanks.
