A unique expression of Valpolicella from a truly amazing producer. Monte Dall'Ora is located in the heart of the Valpolicella appleation and is run by husband and wife team Carlo Venturini and Alessandra Zantedeschi. The estate focuses on the traditional varieties of the area and is certified biodynamic. The grapes are trained on pergola in the traditional style of Valpolicella, to prevent mildue.
The wine itself is a blend of 40% Corvina,30% Corvinone, 20% Rondinella, 10% Oseleta & Molinara. After hand harvesting an initial natural fermentaion occurs in tank. A few months later the pomace of their recioto is then added into (aka "repassed," hence the term ripasso) the young wine to add structure and depth. This begins another fermentation, after completion the wine is aged both in botti and in the bottle.
This muscular take on a Valpolicella has notes of brandied cherries, cedar, chestnuts and pasilla chile.
