An aromatic and refreshing wine from an upstart producer. Ovum Wines is a husband and wife project by Ksenija and John House based in Newberg, Oregon, just south of Portland. After cutting their teeth in the Williamette valley, they left to explore Oregon's other terriors and landed in western Oregon with its Pacific influence and rocky soils. To hone in the focus on place they practice native ferments only and no additions or subtrations, with the only exception being so₂ at bottling.
This particular wine is a zippy white blend in the style of edelzwicker table wines of Alsace. The blend is made up of 50% Riesling, 30% Gewürtraminer, 12% Muscat, 5% Pinot Blanc, 2% Sauvignon Blanc, and 1% other varietals. All the differnt varietals are pressed separately in ways that best suit them. The must is then co-fermented in stainless steel and aged on its lees for a few months before bottling.
This refreshing wine has notes of mint, magnolias, white peach and thyme.
