Beach plums are indigenous to New York. Plums are sourced from Briemere Farms. 7 month maceration in high proof Greenhook Gin. 140 proof at the front of maceration, down to 80 proof after 7 months. Adjusted to 30% abv. Turbinado sugar is employed to adjust sweetness. Filtered then bottled. Cherry cough syrup. Bitter notes, maybe from the pit. Nice structure, restrained on the sweetness. ch
