A fun sparkler from a natural producer. Vitivinicola Fangareggi is a small estate founded in 2005 just north of Modena, in Emilia-Romagna. Originally run by its founder Giuseppe Fangareggi it is now run by his son Matteo as well as Margherita, Matteo's mother. All the grapes used are from the family's land, which eschews chemical herbicides and fungicides as well as mechanical weeding. This organic practice is also followed in the cellar, relying only on native yeast.
This wine is made from 100% organic Lambrusco Salamino, all manually harvested. After a gentle pressing the grapes are macerated for 48 hours and the first fermentation to produce alcohol takes place in stainless steel with native yeasts. The second fermentation to produce bubbles is done via the Charmat method (same as Procecco) with extended lees contact afterword.
