The wines of François and Julien Pinon are considered among the finest of Vouvray. They've been practicing organic farming since 2007, in the corniche of the Vallée de Cousse where the soil is clay and silica on a base of limestone (tuffeau) with flint (silex). The Pinon follow a discipline of plowing the vineyards, not using chemical fertilizers and pesticides and, of course, he harvesting by hand and uses not using cultured yeasts in the cellar.
This wine is from 100% Chenin Blanc from 0.6 hectare's worth of its more clay-forward parcels. The fruit is harvested by hand, rigorously sorted and whole-cluster pressed. It's aged on its fine lees for 4-5 months in a variety of used oak. The result is elegance incarnate: toasty almonds, lemon and pineapple zest with a vibrant palate.
