Water source is Rest Avel. Distilled twice in copper pot stills at the over 100 year old Warenghem Distillery in Lannion, Brittany. 100% French malted barley grown on granitic soil. Distilled twice in "traditional" copper stills. Aged in a combination of 60% re-fill Bourbon barrels, 30% re-fill Spanish oak oloroso sherry butts and 10% re-charged Bourbon cask, mostly from Buffalo Trace. 6 years old on average, in a low humidity environment, similar to the Scottish Highlands. Non-chill filtered. Almond extract and savory notes on the nose. More floral on the nose with water. On the palate, fresh peaches, mint, honey & nougat. Vanilla and spice on the finish. Nice interplay between earth and fruit. Solidly delicious. 46% abv.
