The "Suburban Moraines" still cider speaks to the forgotten sites that inspire Erik; roughly a third of the apples used for this cuvee come from uncultivated crab apple trees from random domestic front yards and backyards, parks and preserves, as well as the common green places next to the highways of Long Island. The remaining fruit is roughly equal parts Black Twig and Winesap apples from Southold Farm, Suffolk, Long Island.
After pressing, the cider went straight into barrel and started fermentation exactly a month later on December 16th, 2018. All fermentations were 100% natural; nothing added, nothing taken away. The cider was unfined and unfiltered. Twenty-five ppm SO2 added April 2018; the cider was bottled by hand July 16th, 2019. Roughly 36 cases produced.
