The Freeland Spirits Bourbon Whiskey is a project started in Oregon by Jill Kuehler, who wished to make spirits with organic grains reflective of the land. This is reflected in their Bourbon, by using a cask finish in French oak Elk Cove Pinot Noir barrels from the Willamette valley. This finish plus the cooler ageing climate give notes of spearmint, ripe cherries, peanut brittle, and maple. Compared to a standard Kentucky Bourbon the Freeland has a svelte and herbaceous profile reminiscent of a high-rye Bourbon, despite the 70% corn mashbill. If you're looking for a sleeker and more demure Bourbon than normal, give this taste of Portland a try!
