From Hye, Texas. 74% Texas Panhandle grown corn, 15% estate-grown wheat and 11% 2-row barley from the Pacific Northwest. Hill Country rainwater is harvested as the water source and is and robustly filtered. Single pot distillation. Sweet mash is employed - no backset. 124 proof off the still: distilling to a lower proof contributes to a smooth mouthfeel. Aged in a combination of 15, 30, and 53 gallon Missouri white oak barrels for at least 3 years. The blazing Central Texas summers help to turbocharge the aging process. Lots of sweet corn and tanned leather on the nose, dark chocolate and raisins. Silky on the palate, with a great balance of fruity and vanilla notes with spice and smoky saddle leather. Soft and fat on the mid-palate. Supple and rich on the finish.
