Started with a seed Bourbon brought from Kentucky by Dave Pickerell. Bourbon produced for the solera not from the seed are produced from grain sourced from neighbors. 63% corn, 37% rye. Made in a 250 gallon copper pot still. 46.3% abv. When a draw comes from the Solera, the resultant liquid is aged in 20 year old Oloroso casks for 36 days. 7 1/2 years weighted average. Beautiful nice dark gold color. Classic Bourbon aromas; a little smokey, a little burnt caramel. Pretty light in body. Snappy rye herbal notes on the finish. This is a promising product. Really well balanced and correct.
