Olivier's La Boutanche Gamay is sourced from his own parcel of 85-year-old, certified Organic vines planted in limestone soils in southern Beaujolais. Fermented whole cluster (no carbonic maceration here) in concrete tanks, pressed, then racked back into the same tanks for aging.
