Noah's Mill from the Willett Distillery, the last distillery on Kentucky's Bourbon Trail to still be an independent, family owned business. Despite a distilling history going back to the 30's, Willett spent most of the late 20th century as "barrel brokers." This allowed them to get through the "glut" years of Kentucky Bourbon while slowly rebuilding the distillery to full operations in the early aughts. The product of this slow build up can be seen with Noah's Mill, a cask strength Bourbon that is around 8 years old. With notes of gingerbread, black pepper, walnuts and cinnamon bun, this is a decadent Bourbon that wears its muscle surprisingly well. Try with a rock or a little water (as this is what cask strength spirits are for) and fortify yourself against the cold with some Kentucky courage!
