Cotidie ("quotidian" in Latin) is an "everyday" wine, at least in the context of Bea (with only 1,647 bottles produced) which he produced for the first time in this the 2019 vintage. He's not allowed to include the grape varieties on the front label as he usually likes to do (since they're associated with DOCGs and this is a mere IGT wine), but it's composed of equal parts Sagrantino della Pianura (which generates a softer wine with gentler tannins) and Trebbiano Spoletino, from a rented parcel on the plain between Montefalco and Spoleto. The grapes were destemmed entirely and, as they would have been in ancient times (hence Bea using a Latin name), co-fermented for 13 days with no temperature stabilization or pump-overs, and the resultant wine spent 147 days on its gross lees after racking. It was bottled at the end of September 2021, and 46 mg/L total sulfur were added throughout the aging process.
