60% Gamay, 30% Pinot Noir, 10% Cot. Certified Organic. Soil is composed of sand, clay, limestone, as well as ancient marine sediment and the microclimate is strongly influenced by the massive forests of Cheverny, Chambord and Sologne. Vine age ranges up to 15 years old and grapes are hand-harvested and hand-sorted under spotlight.
Fermented separately, 15 days of carbonic maceration for the Gamay and 60% of the Pinot Noir, the Cot is destemmed. Wild yeast and no additives. Blended in December and aged 6-8 months in tank. 6 mg/l of sulfur added at the bottling.
