Co-fermented Palomino (85%) and Arinto (15%) from Puerto de Santa Maria and Sanlucar de Barrameda. Lightly stomped and kept on skins for 12 hours followed by whole bunch pressing. Aged in large, used chestnut casks previously used for Sherry (Manzanilla and Amontillado). Barrels are topped up. Unfined, unfiltered.
