A varietal Xarel-lo from from the Recaredo Corpinnat estate. The Alt Penedès, where Recaredo is located, has for along time been almost entirely dedicated to the production of Cava. While the estate still makes very esteemed sparkling wine, the owners Josep and Antoni “Ton” Mata Casanovas wanted to explore the terrior of the Alt Penedès in still wines. Under the Celler Credo label they apply the same standards of natural fermentations and hand harvested biodynamic grapes to still wines.
The wine itself is made from 100% Xarel-lo. After a natural fermentation, the wine rests in stainless steel for 6 months on its fine lees.
This steely, Muscadet-esque wine has notes of sel gris, yellow apples and bread dough.
