The everyman's drink of Bolivia. A grape pomace brandy, but careful: don't call it a Pisco. Singani is a protected DO - the vineyards and distillery must be located at least 5250' elevation. The only grape varietal allowed is Muscat d'Alexandria. Distilled 2x in a Cognac-style alembic pot still, with the pomace, but without the stems. Very clear aspect; quite aromatic Muscat nose, floral and leafy; texture in the mouth almost rum-like, round and fruity but still taut and dry on the finish. Delicious, would make a versatile cocktail spirit.
