President and Master Brewer Takahiro Nagayama is passionate about the estate grower-producer style, and after working with Phillipe Pacalet in Burgundy, became obsessed with "terroir". Chablis is a particular inspiration, so he cultivates his rice on limestone rich soils and sources, and uses limestone rich spring water to brew his sake. The minerals are culture-friendly and the result is a minty, green melon noted, aroma but umami/mushroom on the palate. A rich structure with a bright acidity. -CWYJ
