Rockstar is 100% Riesling barrel fermented, with 10% whole cluster, and no crushing for 7 days. After. the wine undergoes spontaneous fermentation and is allowed to ferment naturally - 90% in 200L Slavonian oak barrels. This wine in 2021 fermented for an entire year(!) and started malolactic fermentation at the beginning of 2022. The wine is aged for 12 months and then bottled with minimal sulfur additions.
